textures which they have experienced in the many different countries and cultures they have visited. “Jumbo Shrimp al Coco” and “Lobster al Olio Peperoccino” are some of the dishes created using traditional lobster tamales bathed in green pipian sauce.
Rodrigo always uses the daily fresh catch from the sea. Some days he serves a delicious yellow fin tuna sealed in ponzu sauce from eastern Mexico and then some other days he is offering up a sizzling broiled USDA beef with French mushroom sauce.
Rodrigo Cabeza de Vaca, owner of La Galeria Restaurant in Cabo San Lucas, learned his trade and was a chef in New York, Toronto, Cancún, Guadalajara, Los Angeles and in the finest restaurants of Italy. He has acquired and transmitted his culinary knowledge, exceptional food quality and preparation, and hygiene standards to his staff to ensure the absolute best for this clientele.
